How teams are picked
You do not pick a team when you book, and you do not need to arrive with anyone. Teams are made on the day.
The organizer splits them
Just before kick-off, once everyone has checked in, the organizer divides the players into teams and hands out bibs. That is deliberately the last thing that happens — it uses who actually turned up, not who booked.
And rebalances if the game is one-sided
An organizer watches the game they are running. If one side is clearly stronger and the match stops being fun, they will move players between teams while it is going on.
Playing with a friend
If you booked a spot for someone, tell the organizer when you arrive that you would like to be on the same team. They will usually do it — the goal is a good game, and two friends on one side is rarely what breaks that.
